Twist the lobster tail off from the main body of the lobster. If you are eating a whole lobster, you need to remove the tail portion to get the meat out. Grab the tail with one hand and the back of the lobster with the other hand. Twist and the tail will separate from the body.
Pull off the telsons or small flippers. There is meat in the flippers, which you can tear open with your fingers or use nutcrackers
Take the tines of a fork and push the tail meat from the telson end through and out to the larger end. If you don't want to use a fork, use your fingers. The meat will slide out in one piece.
Peel off the top of the tail. You will find the digestive tract, a greenish colored cord. Remove the cord.
Rinse the tail meat in clean water. It is now ready to eat. You may dip the lobster meat in butter or a mixture of vinegar and butter. Try a few drops of Tabasco sauce in the butter for a different taste.
