เห็ดเข็มทอง (Flammulina velutipes (Curt:Fr.) Singer) มีชื่อสามัญว่า Enokitake หรือ The Golden Mushroom
เป็นเห็ดที่มีการพัฒนามานานมาก โดยเฉพาะในประเทศญี่ปุ่น มีการวิจัย พัฒนาสายพันธุ์และวิธีการเพาะเห็ดชนิดนี้อย่างกว้างขวาง จึงเป็นผู้ผลิตเห็ดเข็มทองรายใหญ่สุดของโลก เห็ดชนิดนี้สามารถนำมาปรุงอาหารได้หลากหลายประเภท อาทิ สุกี้
Enokitake mushrooms contain antioxidan like ergothioneine.[and animal testing has indicated possible applications in the development of vaccines and cancer immunotherapy.
Research at the National University of Singapore, first published in 2005, stated that the stalk of the golden needle mushroom contains a large quantity of a protein, named "Five" by the researchers, that helps in the regulation of the immune system. The mushroom also contains flammutoxin, a cytolytic and cardiotoxic protein that has proven to be non-toxic when absorbed orally.
สรรพคุณทางยา
ถ้ารับประทานเป็นประจำจะช่วยรักษาโรคตับ กระเพาะและลำไส้อักเสบเรื้อรัง เห็ดเข็มทองมีสาร flammulin สามารถยับยั้งการเจริญเติบโตของเซลล์มะเร็งเยื่อบุช่องท้อง(Ehrlich) และเซลล์มะเร็ง Sarcoma 180 ในหนูขาว ได้ผลถึง 81.1-100% และมีคุณสมบัติในการกระตุ้นระบบภูมิคุ้มกันของสิ่งมีชีวิต
